Facts About Daktyla
Daktyla is a delectable leavened bread originating from Greece, which has also gained popularity in Cyprus and Turkey. Its distinctive, segmented appearance resembles fingers, hence its name, 'finger bread' (Δάχτυλα or Daktyla in Greek, meaning "fingers"). This unique shape is achieved either by making deep slashes in the loaf before baking or by placing a row of dough rolls close enough to fuse during the proving stage.
Traditionally, Daktyla is made using 'country' flour, a mixture of wheat flours and fine cornmeal, giving the bread a light yellow hue. To enhance its flavor and add a bit of crunch, the bread is often sprinkled with sesame and nigella seeds. In some versions, nigella seeds are also mixed directly into the dough, imparting a subtle, aromatic taste.
