Tavče gravče

Tavče gravče is a beloved traditional dish from North Macedonia, renowned for its fresh beans. It holds the esteemed title of the national dish and is cherished not only within North Macedonia but also among Macedonian communities worldwide. What truly sets Tavče gravče apart is its preparation and serving method: baked and presented in a traditional unglazed earthenware pot, which imparts an authentic touch.

The fundamental ingredients are straightforward: butter beans, onion, oil, dry red pepper, red and black pepper, salt, and parsley. The preparation begins by soaking the beans in water overnight or for several hours until they soften. Following the soaking, the beans are boiled in fresh water multiple times, with an onion added during cooking to enhance the flavor.

Once the beans are tender, they are combined with sautéed onions, flour, ground red paprika, salt, and black pepper to intensify the taste. Some recipes suggest including a bit of dried meat, such as smoked pork or bacon, for added richness. The mixture is then transferred to the earthenware pot and baked in the oven. It is essential to periodically check the dish to ensure it does not dry out.
