Facts About Chahuis
Chahuis, also known as xamoes in Mexico, are edible beetles belonging to the order Coleoptera. In English, they are often referred to as "stick worms" "rhinoceros beetles" or "grubs." These insects primarily feed on Mesquite trees. The larvae from various beetle families, including Cerambycidae, Scarabaeidae, Melolonthidae, and Passalidae, are particularly prized for their flavor.
In Mexico, 88 different species of edible beetles, mainly their larvae, are incorporated into the local diet. These beetles are a culinary staple in several Mexican states such as Hidalgo, Tabasco, Guerrero, Veracruz, the State of Mexico, Oaxaca, Puebla, Mexico City (Distrito Federal), Nayarit, Chiapas, and Michoacán.
To prepare Chahuis properly, it is essential to toast them thoroughly to eliminate any bitter taste. This traditional method ensures that they are both palatable and safe to eat.
