Pindjur

Pindjur, also spelled pinjur or pinđur, is a delectable relish particularly enjoyed as a summer spread. This traditional dish originates from Bosnia and Herzegovina, Bulgaria, Serbia, and North Macedonia. Its primary ingredients are red bell peppers, tomatoes, garlic, vegetable oil, and salt. Distinct from ajvar, which it closely resembles, pindjur often includes eggplants.

Crafting pindjur is a labor of love. It demands considerable time and patience, as certain ingredients require prolonged baking, and the peppers must be roasted and peeled. Despite the effort, the result is a flavorful and versatile spread that is well worth it.

Interestingly, in some regions, pindjur and ajvar are used interchangeably, even though their ingredients have slight variations.
