Bazlama is a cherished traditional Turkish bread, celebrated for its simple yet delectable flavor. This flat, circular bread boasts a creamy yellow hue and is typically about 2 cm thick. Its diameter can range from 10 to 25 cm.
Crafted with just several essential ingredients—wheat flour, water, salt, and yeast—bazlama is straightforward to prepare. The process begins by mixing the dough and allowing it to ferment for two to three hours. After fermentation, the dough is divided into portions weighing between 200 and 250 grams each. These portions are then shaped, rolled out to the desired thickness, and baked on a hot plate. To ensure even cooking, the bread is flipped during the baking process.
Bazlama is best enjoyed fresh. While it can remain edible for a few hours to a few days depending on storage conditions, nothing compares to the taste when it's fresh off the griddle.
