Facts About Sardo
Sardo cheese is a hard, grating cheese made from cow's milk. It bears similarities to Pecorino Romano, but while Pecorino Romano is crafted from sheep's milk and boasts a sharper taste, Sardo is produced from cow's milk and offers a mellower, richer, and lightly salty flavor.
Originating from Argentina, Sardo cheese is typically white to yellowish in color and generally comes in blocks weighing about 6.5 pounds. It is traditionally coagulated using animal rennet and adheres to the U.S. Standards of Identity for cow's milk cheese.
It is important not to confuse it with Pecorino Sardo, an Italian cheese made from sheep's milk.
Interestingly, "Sardo" is also the term used for the Sardinian language, which is still widely spoken on the Italian island of Sardinia.
