Facts About Hauskyjza
Hauskyjza is a traditional dish made from cottage cheese, caraway seeds, and a few other ingredients. To prepare it, the mixture is left to ferment for a few days, which imparts a sharp flavor, distinctive aroma, and sticky consistency. After fermentation, it is warmed and fried. Baking soda is often added to condition the cottage cheese.
This distinctive dish is known by various names, such as Ser Smażony or Ser Zgliwiały, and is particularly popular in regions like Wielkopolska, Pomorze, Kujawy, and Silesia. Before the advent of refrigerators, Hauskyjza was especially valued for its long shelf life.
The strong scent and flavor of Hauskyjza are cherished by many, though they might be a bit too intense for some. It is typically served with dark bread and caraway seeds, or with "music"—a mix of chopped onions soaked in vinegar and oil. Some people also enjoy it freshly made, similar to fondue.
Traditionally, Hauskyjza was made at home, hence the name (which means "house cheese"), but nowadays, it is also produced commercially. In 2005, it was officially added to the List of Traditional Products by the Ministry of Agriculture and Rural Development under the name "Ser domowy smażony z kminkiem, z czosnkiem, bez przypraw" (homemade fried cheese with caraway, with garlic, without spices).
