Toum

Salsat Toum, also known as toumya, is a cherished garlic sauce originating from the Levant region. The name "toum" is derived from the Arabic word for garlic, "thoum" as it is articulated in the Levantine dialect. Similar to the Provençal aioli, this sauce has several variations. The basic recipe typically includes garlic, salt, olive oil or vegetable oil, and lemon juice, all traditionally mashed together using a wooden mortar and pestle. A popular variation on this classic is "zeit wa toum" which incorporates mint into the mixture and is particularly favored in areas like Zgharta, Lebanon.

Salsat Toum, or Garlic Sauce, is incredibly versatile. It is often enjoyed as a dip alongside French fries, chicken, and artichokes. It is also an essential condiment for Levantine sandwiches, especially those featuring chicken. Additionally, grilled chicken dishes frequently come with a side of this aromatic sauce, adding a burst of flavor to every bite.
