Yubeshi is a delightful type of wagashi, or Japanese confectionery, that comes in a variety of flavors and shapes. Often made with walnuts or Japanese citrus, yubeshi can be either round or square. The primary ingredients include sticky rice or rice flour, sugar, and soy sauce.
Crafting yubeshi is a labor of love. It begins by cutting a circle from the top of a yuzu fruit and removing the flesh and pith. The hollowed-out yuzu is then filled with a special mixture and steamed multiple times until it becomes shiny and brown, resulting in a distinctive, gelatinous mochi-like texture. The longer yubeshi is stored, the firmer it becomes.
