Moimoi, also known as Moin-Moin, is a cherished Nigerian dish that is essentially a steamed bean pudding made from black-eyed peas, onions, and fresh red peppers. Rich in protein, it is a cornerstone of Nigerian cuisine. In Ghana, you will find a similar dish called 'Alele' or 'Olele,' which is often enjoyed with Hausa koko.
The preparation of Moin-Moin begins with soaking and peeling the beans, followed by grinding them into a smooth paste. This paste is then seasoned with salt, bouillon cubes, dried crayfish, and oil. At this stage, you can personalize the dish by adding ingredients such as sardines, corned beef, or boiled eggs.
