Bollo

Bollo is a cherished staple in Latin American cuisine, particularly in Colombia, Cuba, and Panama, made from ingredients such as corn, yuca, or potato. In Colombia and Panama, corn and yuca bollos are traditional delights from the Caribbean coast, usually boiled in leaves. Variations of bollo can also be found in other Latin American countries, including Venezuela and Brazil.

In Cuba, you'll encounter black-eyed pea bollos, which closely resemble hushpuppies. In Colombia, bollos are commonly sold by street vendors along the coast and in stores, often enjoyed for breakfast accompanied by cheese. In Panama, the bollo is sometimes likened to a type of tamale.
