"Saramură" is a cherished Romanian dish that varies depending on the region. In Dobruja, it is typically prepared with fish, while in Moldova and Transylvania, it often features dried or smoked meat. The dish involves grilling the fish or meat and then soaking, sprinkling, or simmering it in a flavorful brine or brine-based sauce.
To enhance its taste, people frequently add vegetables, mamaliga (a type of polenta), and potatoes. The Lipovans, a community in Romania, have their own term for this dish: "rassol." For example, a popular variation known as "saramură de crap" (carp saramură) is referred to as "karp rassol" among them. This dish is often translated into English as "carp in brine" or "salted carp."
