Facts About Socată
Socată, also known as suc de soc, is a cherished traditional Romanian soft drink made from the flowers of the European elder shrub, Sambucus nigra. This refreshing beverage can be either non-alcoholic or mildly alcoholic and can be either carbonated or non-carbonated, depending on the fermentation process.
The preparation of socată involves fermenting elder flowers in a mixture of lemon juice and sugar or honey. Some recipes also incorporate raisins, spices, and yeast or rice grains to enhance fermentation. Fresh elder flowers are ideal for brewing in early summer, but dried flowers are a suitable alternative for other times of the year.
The primary fermentation period lasts about 2-4 days in a container that is covered but not airtight. After this, the drink is filtered, bottled, and refrigerated. It is best enjoyed within 1-2 days, but if left to ferment for a longer period, it can become more alcoholic and carbonated, similar to beer.
In traditional Romanian medicine, elder flowers are believed to provide various health benefits, including detoxifying, diuretic, and expectorant properties. Interestingly, the European elderberry plant is also prevalent in North America.
Socată is not limited to Romania; it is enjoyed in many countries. Variations such as "Fanta Shokata" can be found in Sweden, Switzerland, Albania, and Serbia. This delightful drink is often shared at gatherings with family and friends, whether for special occasions or casual get-togethers.
