Okróshka is a refreshing cold soup from Russia, with origins believed to be in the Volga region. This traditional dish is a delightful mix of raw vegetables such as cucumbers, radishes, and spring onions, combined with boiled potatoes, eggs, and various cooked meats like beef, veal, sausages, or ham. The standout ingredient is kvass, a non-alcoholic fermented beverage made from black or rye bread. For added richness, a dollop of sour cream is often included.
