Zefir

Zefir is a delightful confection originating from the countries of the former Soviet Union. Imagine a sweet treat that combines the lightness of marshmallows with the subtle fruitiness of berry purée—that's Zefir for you.

This airy dessert is crafted by whipping together a blend of fruit and berry purée with sugar and egg whites until it reaches a fluffy consistency. Subsequently, a gelling agent such as pectin, carrageenan, agar, or gelatin is incorporated to achieve the perfect texture. The name "Zefir" is inspired by Zephyr, the Greek god of the gentle west wind, aptly reflecting its light and delicate nature.

Zefir bears some resemblance to marshmallows, Schokokuss, or krembo, but it is actually an evolution of a traditional Russian confection known as pastila. By incorporating egg white foam and a gelling agent, Zefir attains a unique, meringue-like form. It is soft rather than crispy, typically available in white or rose hues. For chocolate enthusiasts, there are also chocolate-coated versions, although these generally omit the biscuit layer.
