Mie kuah, also known as mie rebus or mee rebus, is a cherished noodle soup dish from Indonesia that is also popular in Malaysia and Singapore. This flavorful dish features yellow egg noodles immersed in a spicy, slightly sweet curry-like gravy. The broth is typically made from shrimp or tauchu (fermented soybean paste) and is infused with a variety of herbs and spices.
What elevates mie kuah are its delightful toppings. It is usually garnished with a hard-boiled egg, dried shrimp, boiled potatoes, and calamansi limes. Other common toppings include tofu, shallots, and bean sprouts. Some versions might even include beef or dark soy sauce for an added twist.
Traditionally, mie rebus was often sold by mobile hawkers who would carry two baskets suspended from a pole—one basket contained a stove and boiling water, while the other held all the necessary ingredients.
