Chalbori-ppang is a delightful Korean treat consisting of two small pancakes made from glutinous barley flour, with a sweet red bean paste filling. These round, mildly sweet confections have a texture reminiscent of a glutinous sponge cake. This delectable treat first made its debut in 2003 at the Danseokga bakery in Gyeongju, located in North Gyeongsang Province. Since then, it has become a beloved local specialty.
A distinctive feature of Chalbori-ppang is that it is made using glutinous barley grown near Danseoksan (Mt. Danseok). This barley is exceptionally special because it is harvested during the cold winter months, when pests and weeds are scarce, eliminating the need for pesticides.
