Fideuà is a delectable seafood dish hailing from the coast of Valencia, reminiscent of paella but with a unique twist: it substitutes noodles for rice. The primary ingredients include pasta noodles, fish, and shellfish, all harmonized with a zesty lemon seasoning.
The origin story of fideuà is quite intriguing. It began with Gabriel Rodriguez Pastor and Juan Bautista Pascual, who, while out on a boat, decided to substitute rice with noodles to resolve a portioning issue. This inventive adjustment proved to be a success, especially in harbor restaurants like the renowned "Casa la Pastaora."
Traditionally, fideuà is prepared in a special flat frying pan, similar to a paella pan. However, some traditional recipes call for a casserole instead. The town of Gandia takes particular pride in this dish; they even host an annual competition to determine who can make the finest fideuà.
