Carrot cake is a delightful dessert featuring carrots incorporated into the batter, often topped with a rich cream cheese frosting. Its history is somewhat enigmatic, but some believe it dates back to a 1591 English recipe for "pudding in a Carret root" which included ingredients reminiscent of contemporary carrot cakes. During the Middle Ages, carrots served as a popular substitute for sugar due to the high cost and scarcity of sweeteners.
Over time, carrot puddings transformed into various forms such as baked carrot pies, steamed puddings, and eventually the frosted cakes we adore today. By the 19th century, carrot cake recipes began appearing in cookbooks, including one by Antoine Beauvilliers, a former chef for Louis XVI. In Switzerland, carrot cake became exceptionally popular, frequently served at children’s birthday parties.
