Kho

Kho is a revered cooking technique in Vietnamese cuisine, involving the braising, stewing, or simmering of proteins such as fish, shrimp, chicken, pork, beef, or tofu. The fundamental ingredients for this flavorful dish include fish sauce, sugar, and water, although young coconut juice can also be incorporated for a distinctive twist. The outcome is a salty and savory dish typically enjoyed with rice noodles, French bread, or steamed rice.

There are numerous variations of kho, each adding its unique flair. For example, bò kho and thịt bò kho are beef stews, while cá kho refers to fish stew. A well-known version of fish stew, cá kho tộ, is traditionally cooked in a clay pot and often features catfish, particularly in southern Vietnam. Chicken enthusiasts might relish gà kho (chicken stew) or gà kho gừng, which introduces ginger for an additional depth of flavor.
