The name originates from the French term "patates râpées" meaning "grated potatoes." This hearty, casserole-like dish is prepared by grating potatoes, squeezing out the excess water, and mixing them with hot broth derived from chicken, pork, or seafood. Meat, onions, and additional layers of grated potatoes are then added to create a delicious and comforting meal. Common meat fillings include beef, chicken, and bar clams.
The origins of rappie pie date back to the time of the Acadian Expulsion. During their exile in Massachusetts, the Acadians likely adopted culinary techniques from other immigrant groups, such as the Germans or Swiss, who used grated potatoes in their recipes. Upon returning to Nova Scotia, the Acadians found that their fertile lands had been taken over by New England settlers, leaving them with rocky terrain suitable primarily for growing potatoes.
