Har gow, also known as shrimp dumplings due to their pleated shape, are a cherished staple of traditional Cantonese dim sum. These delicate shrimp dumplings are often paired with siu mai, another dim sum favorite, and together they are commonly referred to as har gow-siu mai.
One of the standout features of har gow is their translucent, smooth appearance, which serves as a true test of a dim sum chef's expertise. The origins of this dish trace back to the outskirts of Guangzhou, specifically near the creek-side Deli bazaar.
A perfectly crafted har gow should have at least seven pleats on its wrapper. The wrapper itself needs to be thin and translucent, yet strong enough to hold the filling. Inside, the shrimp should be perfectly cooked—not overdone—and there should be a generous amount, making each dumpling a satisfying one-bite delight.
