Speķrauši, also known by various names such as speķa rauši, speķa pīrāgi, or speķa pīrādziņi, are cherished Latvian bread rolls or pastries filled with finely chopped bacon and onions. These delicious treats come in different sizes, with the smaller versions being particularly prized for their delicate flavor. While each family may have its unique recipe, the traditional shape and bacon filling remain consistent.
Often prepared for special occasions, speķrauši are also available in local bakeries. They are a staple at Latvian celebrations and are deeply embedded in the country's culinary traditions.
Latvian pies, or pīrāgi, come in numerous variations. Fillings range from fatty bacon and various meats to fish, cabbage, and cottage cheese. There are two main types: the plain bread pīrāgi made from yeast dough with assorted fillings, and the broth or soup pīrāgi made from flaky pastry dough, usually filled with meat or fish and served with broth.
