Salsat Toum, also known as toumya, is a cherished garlic sauce originating from the Levant region. The name "toum" is derived from the Arabic word for garlic, "thoum" as it is articulated in the Levantine dialect. Similar to the Provençal aioli, this sauce has several variations. The basic recipe typically includes garlic, salt, olive oil or vegetable oil, and lemon juice, all traditionally mashed together using a wooden mortar and pestle.
