Skilandis, also known as Kindziukas, is a traditional Lithuanian sausage with a rich heritage. Crafted from a mixture of meat, fat, salt, pepper, and garlic, this savory sausage is typically encased in a pig’s stomach or bladder. However, contemporary methods may employ alternative types of casings.
The preparation process involves drying and cold smoking, which imparts Skilandis with its distinctive flavor. This sausage has been savored since at least the 16th century, with historical records noting its presence in various parts of the Grand Duchy of Lithuania from the 16th to the 18th centuries.
In recognition of its cultural importance, the term "Skilandis" has been granted Protected Designation of Origin (PDO) status by the European Union. This ensures that only sausages produced in a specific manner and region can bear the name.
