Sapin-sapin is a beloved dessert in the Philippines, renowned for its colorful layers and delightful flavors. Made from glutinous rice and coconut, this treat is a feast for both the eyes and the palate.
To prepare sapin-sapin, you'll need a few essential ingredients: rice flour, coconut milk, sugar, water, flavoring, and coloring. Traditionally, each layer of this dessert features a distinct flavor. Commonly, one layer is infused with ube halaya (purple yam) and another with jackfruit, while the plain white layer usually remains unflavored.
In commercial versions, however, food coloring is frequently used without additional flavors to reduce costs.
The name "sapin-sapin" originates from the Ybanag dialect, where "sapin" means layers, aptly describing the dessert's characteristic appearance.
To make sapin-sapin at home, begin by mixing glutinous rice flour, sugar, condensed milk, coconut milk, and vanilla extract. Then, divide the mixture into three parts.
