Pindjur, also spelled pinjur or pinđur, is a delectable relish particularly enjoyed as a summer spread. This traditional dish originates from Bosnia and Herzegovina, Bulgaria, Serbia, and North Macedonia. Its primary ingredients are red bell peppers, tomatoes, garlic, vegetable oil, and salt. Distinct from ajvar, which it closely resembles, pindjur often includes eggplants.
