Sai ua, also known as northern Thai sausage or Chiang Mai sausage, is a cherished culinary delight hailing from northern Thailand and northeastern Burma. If you ever find yourself in the northern provinces of Thailand, trying sai ua is a must. Its renown, however, extends well beyond these regions, captivating the taste buds of people across the entire country. The name "sai ua" is derived from the Thai words "sai" (intestine) and "ua" (to stuff). In Shan State, it is sometimes referred to as "sai long phik."
