Ga'at

Genfo is a traditional Ethiopian dish resembling a stiff porridge. It's typically molded into a round mound with a central well, ideal for holding a savory sauce. This sauce often comprises a mixture of butter and red peppers or a blend of pulses such as sunflower seeds, nuts, and flax seeds.

To prepare genfo, you begin by mixing barley or wheat flour with water. The crucial step is to keep stirring the mixture with a wooden spoon as it cooks. Once it's ready, the genfo is served with an indentation in the center, filled with niter kibbeh (clarified spiced butter) and berbere (a spicy seasoning blend).

Genfo can be enjoyed by scooping it with your hands or using utensils. It's a hearty and flavorful dish that is a staple of Ethiopian cuisine.
