Facts About Konro
Konro is a delectable rib soup from Indonesia, originating from the Makassarese and Buginese people of South Sulawesi. Traditionally, it's prepared with various types of ribs, such as spareribs or beef ribs, and is characterized by its distinctive brown-black hue. It is commonly served with burasa or ketupat—rice cakes sliced into bite-sized pieces—or simply accompanied by rice.
What sets konro apart is its rich, spicy flavor, which is achieved through a complex blend of spices that includes coriander, keluwak (a fruit that imparts the soup's dark color), nutmeg, turmeric, galangal, cinnamon, tamarind, lemongrass, clove, and salam leaves.
There is also a contemporary variation known as konro bakar, or grilled konro. In this version, the ribs are marinated in the same spices used in the soup, then grilled to perfection. This offers a delightful new way to savor the bold flavors of konro in a dry, grilled form.
