Facts About Kaldereta
Kaldereta, sometimes spelled caldereta, is a cherished traditional stew from the Philippines. While the classic version uses goat meat, it’s commonly prepared with beef, chicken, or pork, contingent on the cook's preference. The meat is slow-cooked with a medley of vegetables, including tomatoes, potatoes, olives, bell peppers, and hot peppers, and it gains a rich flavor from liver paste and sometimes tomato sauce.
The name "caldereta" derives from the Spanish word "caldera" meaning cauldron, alluding to its hearty, stew-like nature. This dish has its roots in meat stews from the Iberian Peninsula, brought to the Philippines by Spanish colonizers during their extended stay in the country.
In Filipino culture, kaldereta is a staple at special events, parties, and celebrations, making it not just a dish but also a symbol of togetherness and festivity.
