Rocky Mountain oysters

Rocky Mountain oysters, alternatively known as mountain oysters, meatballs, or prairie oysters in Canada, are a distinctive dish crafted from bull testicles. Typically, the testicles are skinned, coated in flour, pepper, and salt, then deep-fried. Occasionally, they are flattened before being served as an appetizer.

This dish is celebrated in regions with a strong cattle ranching tradition, such as parts of Canada, Oklahoma, Texas, Spain, Argentina, and Mexico, where they are known by various names. You might also hear them referred to as cattle fries or animelles, prepared in a similar manner.

Rocky Mountain oysters are often associated with cowboy culture and can be found at festivals, ranches, specialty eateries, and bars. Some locations even host testicle festivals to honor this unique dish. While some view Rocky Mountain oysters as a novelty or even a prank food, others believe they possess aphrodisiac qualities.

It is important to note that the primary reason for castrating animals isn't culinary but practical, serving purposes in veterinary care and animal husbandry such as controlling breeding and enhancing meat quality.

Similar dishes can be made from the testicles of other animals, including lamb fries (from castrated sheep), pig fries, and turkey fries. These variations occasionally surface in diverse culinary contexts as well.
