Fritessaus, also referred to as frietsaus, is a cherished Dutch condiment frequently served alongside French fries throughout the Netherlands. Consider it akin to mayonnaise, but with a distinctive twist—it contains a maximum fat content of 25%, rendering it lighter and often a touch sweeter than traditional mayonnaise.
In the Netherlands, there is a regulation from 1998 known as the Warenwet that establishes the standards for products labeled as mayonnaise. According to this regulation, mayonnaise must comprise at least 70% fat and 5% egg yolk. Due to its reduced fat content, fritessaus does not meet these criteria, yet it serves as a delightful alternative.
While most people purchase fritessaus ready-made from stores, it is entirely possible to prepare your own version at home. The procedure closely resembles that of making mayonnaise, though you typically thin it with a bit of water or other liquids.
