Pastillas, often referred to as Pastillas de Leche or Pastiyema, is a delightful milk-based confection originating from the charming town of San Miguel in Bulacan, Philippines. Over time, this sweet tradition has expanded to other regions of the country, including Cagayan and Masbate.
Originally, pastillas de leche were lovingly crafted at home by carabao-rearing farmers using just a few simple ingredients: carabao or cow milk, refined sugar, and a splash of calamondin juice. What began as a humble homemade treat has grown into a small-scale industry.
In San Miguel, Bulacan, the affection for pastillas is celebrated with grand festivities during the annual Pastillas Festival, a vibrant tradition since 2006. A highlight of the festival is the exquisite pabalat wrappers, showcasing intricate paper-cut designs that add an extra touch of artistry to this already cherished confection.
